Eamonn Matthews

The Glenarm Redspark Lamb AFCS group members comprise a local hill farmer Ronan Matthews who runs a mixed farm of blackface sheep and Limousin pedigree cattle, outside of Glenarm. Ronan runs his farm with his father and they specialise in rearing quality stock for breeding.

Eamonn Matthews is also a hill farmer from Glenarm and the lead applicant of the group. Eamonn runs a traditional upland hill farm, managing a flock of Scottish Blackface sheep and a flock of pedigree Dorsets. Eamonn manages his flocks and the land to minimise the carbon footprint they leave, hence why he is trying to shorten the supply chain, retailing locally.

A local young chef Sean Moran is also a group member. Sean brings a wealth of culinary experience from his days working in high quality restaurants in France and London. Sean has a passion for working with local producers and sourcing local provenance which made him a perfect fit for this group. Sean runs a local restaurant offering the finest meat and fish from the surrounding Glenarm and Glens area.

The expertise in lamb processing and butchery is provided by Joe Magill. Joe has over forty years in the butchery and meat processing sector, having successfully managed two butcher shops in a busy retail environment. Joe has always demonstrated commitment to local producers, sourcing quality lamb and beef direct from farms throughout the Glens.

Portia Woods brings her experience in food tourism to the table. Portia manages the Toast The Coast NI, food tour company. Her premium food tours along the Antrim coast take in all the usual scenic spots, incorporating the finest of food eateries and sampling along the way. Portia’s credentials include being a member of Tourism NI and also policy stakeholder representative for many bodies across NI.

The co-operation between these individuals is what makes the newly formed Glenarm Redspark Lamb such a unique organisation, representing such a diversity and wealth of experience within the lamb and food tourism sector. The group are always seeking new members who can contribute to the growth and development of the project.
